Icebergs Dining Room and Bar, the landmark restaurant perched above Bondi Beach, has announced that Roman chef Sarah Cicolini will headline its Summer Series 2025-26 with a three-night residency from February 3-5 2026.
Cicolini, chef-owner of Rome’s celebrated SantoPalato restaurant, is known for her contemporary interpretations of traditional Roman dishes. The residency will feature exclusive dinners priced at $200 per person, including a welcome drink, and will showcase a menu developed in collaboration with Icebergs’ culinary director Alex Prichard and local Australian producers.
“Bringing my Roman dishes to Sydney is incredibly exciting,” Cicolini said. “There is a soulfulness to the food of Rome that I can’t wait to share with Icebergs Dining Room and Bar. Working with Australian producers opens up a whole new palette of ingredients, and I’m inspired by the chance to blend the extraordinary freshness of Australian produce with the traditions I carry from home.”
A significant cultural exchange
The collaboration represents a significant cultural exchange, pairing Cicolini’s Roman culinary heritage with Australia’s renowned produce. Prichard praised the partnership, noting that Cicolini’s cooking is deeply rooted in both history and passion, making this one of the venue’s most anticipated collaborations.
The chef residency anchors Icebergs’ broader Summer Series, which Tasso Della Noce, CEO of Icebergs Dining Room and Bar, described as embodying the restaurant’s commitment to creativity and community. The seasonal program combines global culinary talent with the energy of Bondi Beach to reimagine the coastal dining experience.
Beyond the Cicolini residency, the Summer Series includes weekly live music on Saturdays, Sunday sessions in partnership with Don Julio 1942, featuring cocktails and small plates, and midweek sunset events featuring resident DJs. The program also encompasses special New Year’s Eve and New Year’s Day celebrations, marking the first large-scale festival at Bondi Beach in more than a decade.
