One of Australia’s most acclaimed restaurants will serve its final meal on Valentine’s Day 2026, marking the end of an era for Sydney’s fine dining scene.
Quay, the harbourside restaurant known for its spectacular Opera House views and innovative cuisine, will close permanently on 14 February 2026.
The site has been sold to Australian Venue Co., which plans to rename and relaunch the venue later in the year. The Quay name and concept will be retired.
A culinary destination
The restaurant’s history dates back to 1988, when it opened as Bilson’s under the direction of Tony Bilson and Leon Fink. A decade later, in 1999, the space was reimagined as Quay, establishing itself as a culinary destination that married architectural elegance with sweeping harbor views and ambitious cooking.
Under Executive Chef Peter Gilmore, who has led the kitchen since 2001, Quay accumulated an impressive roster of accolades.
The restaurant earned three hats from the Good Food Guide for 23 consecutive years and earned multiple appearances on The World’s 50 Best Restaurants list, drawing diners from around the globe.
Gilmore’s signature creations, including the now-legendary Snow Egg dessert, became touchstones of modern Australian cuisine and remained part of the country’s culinary conversation long after being removed from the menu.
“Quay has been part of my life’s work – a place where creativity, hospitality, and the beauty of Sydney Harbour come together,” said Fink Founder Leon Fink in a statement. “I am immensely proud of what we have achieved alongside Peter and the incredible teams who have shaped the restaurant’s legacy.”
The closure marks the end of more than 25 years under the Quay name.
Fink indicated the restaurant would celebrate its legacy and the many guests who have dined there over the years as it prepares for its final service.
