Edition acquires Melbourne dining icons from Grossi family

Edition has acquired five of Melbourne’s most storied dining venues from the Grossi family.

Edition Hospitality has acquired five of Melbourne’s most storied dining venues from the Grossi family, including the nearly century-old Florentino.

The acquisition includes Florentino, The Grill, Cellar Bar, Ombra, and Arlechin — all housed within the historic Bourke Street institution that has defined fine dining in Australia’s culinary capital.

“It is an honour and a privilege to be taking over some of the most important and beautiful restaurants in Australia,” said Rebecca Yazbek, founder and CEO of edition. “I aim to build on the unique identities and storied legacies of the famed Florentino and balance its cherished past with a dynamic future.”

Keen to tap into new talent, edition has attracted Michael Greenlaw, who recently earned acclaim at Atria in Melbourne’s Ritz-Carlton, as its new culinary director.

Brendan Katich, current executive chef at Reine & La Rue, will step into the executive chef role at Florentino.

The transition will take effect in November, with edition planning no immediate operational changes as the team takes time to understand the business. A refresh is planned for the future.

The Grossi family has operated Florentino as a cornerstone of Melbourne’s Italian fine dining scene for decades, making the handover a significant moment in the city’s restaurant landscape.
